Gosh, it’s Monday already! I know it’s coming, but somehow I am still surprised when it does come rolling around every week. It’s ridiculous! I did have a great weekend though, did you?
Our weekend started a little earlier than usual though. Jared called me while I was at work on Thursday to tell me he finally landed a new job as a draftsperson at a place he’s been really wanting to work at! If you’ve been reading here a while, you’ll know that Jared post-poned his university degree back in March, to take a big leap of faith and try his luck at getting his foot into the industry. It’s been a big ride, and a long 5 months of job-hunting for him, so to hear the excitement/nervousness in his voice when he told me he got the job he’d been really wishing for, was such a beautiful thing. In just two short weeks, a new and exciting chapter of his life is about to start, and I couldn’t be happier for him! To celebrate, I took him out to his favourite local Japanese restaurant after work, where we indulged in a ridiculous amount of sushi!
After work on Friday, we basically just spent the night on the couch, relaxing with raw chocolates, a bottle of wine, Indian take out and binge watched season 2 of Boardwalk Empire. It was very welcomed after a couple of big weekends back to back. We bought the first season of Baordwalk a few weeks ago to see if it was any good, and it only took 5 minutes into the first episode before we were well and truly hooked. We watched the whole first season in a matter of days, and hadn’t been able to get the next season as we were so busy. On Friday, I decided to stop over at JB Hi-Fi on my way home, and saw that they had a buy 2, get 1 free sale on tv shows so I picked up seasons 2,3 and 4 for Jared as a little surprise and we’ve been watching it every night since.
Saturday I had the Assembly Co’s Winter Gathering lunch, which was absolutely amazing! I’ll be doing a full post on it later this week, so I don’t want to reveal too much. But here’s a little sneak peek just to tease you:
Sunday was spent prepping some meals for the week. I’ve been a bit lazy with that recently, and I knew I needed to get my butt into gear. Our budgets (and waistlines) just can’t go on with both of us buying lunches/snacks more often than not. One of things I made was Choc Orange Bliss Balls. I’ve been buying random little snack bars/food after work or yoga to tie me over until I get home. The cost of them adds up after a while, so I decided to make my own snack balls.
The beauty of bliss balls is they’re ridiculously easy to make and you get quite a few with each batch. This one made 10, which is enough for Jared and for the next couple of days. Next time, I’ll make double the batch to get us through a whole week. I was just testing this recipe out first and didn’t want to make too much if it wasn’t nice and I also wasn’t sure how the orange juice and rind would taste in a bliss ball. But I’ve been given the official thumbs up from Jared, who texted me after scoffing down a couple for morning tea today. His only problem was that they disappeared too quickly, haha! Success!!
I rolled my bliss balls in a mix of LSA and chia seeds for an added protein and fibre kick, but this isn’t essential. You can roll them in anything you like – shredded coconut, raw cacao, sesame seeds, crushed nuts… the options are endless!
I then just popped them into a container and stored them in the freezer (fridge is fine too).
It’s a great little way to get some nourishment in, perfect for a morning/afternoon pick me up or for post work outs to tie you over until your next meal. You could even have them for dessert if you’re looking for a healthy option to munch on.

- 1 cup medjool dates, pitted
- 1 cup raw walnuts
- 1/2 cup raw cashews
- 1/4 coconut flakes
- 2 tablespoons melted coconut oil
- 1/4 cup raw cacao powder
- 1/4 cup fresh orange juice
- 1 teaspoon honey
- 1 teaspoon finely grated orange rind
- To roll: 2 tablespoons each of LSA and chia seeds mixed together*
- Soak dates in warm water for 15mins.
- Pulse walnuts, cashews and coconut in food processor until roughly chopped (I like mine crunchy, but you can have it as fine/chunky as you like).
- Drain the dates and add to the food processor, along with all other ingredients except LSA and chia seed mix.
- Using a tablespoon, scoop out a heaped spoonful into hand and roll into a ball.
- Roll the ball in LSA and chia seed mix until well covered.
- Repeat with remaining mix until finished.
- Keep stored in an airtight container in the fridge or freezer until ready to eat.
- * You can use whatever toppings you like. Some other good ones for rolling are chopped nuts/seeds, shredded coconut, sesame seeds or raw cacao.
