Hello there lovelies, I hope you all had a good start to the week. It was a busy one in the office for me today, which is becoming the norm for me during this time of year! It does remind me though why it’s such a great idea to have some delicious and nourishing meals on hand to grab and take to work with me. It just means I can still enjoy healthy meals even when I’m short on time!
I prepped all my meals yesterday afternoon after an already pretty productive weekend. I poured myself a small glass of port (my only glass of wine all weekend – I am just as shocked as you are), turned on some great tunes and got stuck into some cooking. I like making this process as enjoyable for myself as possible, so I don’t think start to think of it as a chore. One of the things that helped me change my relationship with food was changing my thoughts towards prepping it!
I stuck to cooking two things yesterday – Kale and Quinoa Salad with Turmeric Dressing and Rainbow Carrot Zucchini Slice. I thought we could rotate both of these dishes for lunches this week! And don’t worry, both of these recipes will be posted this week too! They are too delicious to not share them with you.
And that was all I prepped yesterday! We still had shakshuka leftover, so that was packed for breakfast this week. We also have plenty of sourdough and nut butters as an alternative breakfast option. And for snacks, we have plenty of fruit, veggies, dips and cheese to work our way through too so I took a pass on making any protein or bliss balls this week!
I’m sorry this post is so short, I have a mountain of uni work to somehow get through (the joys of being overly ambitious and trying to juggle full time work and part time study – eep!). So I better sign out and get stuck into it!
