What I Ate #18

Ahh it’s good to be back with my usual recap of my weekly eats! I didn’t do a post last week as life was a bit busy, but I have plenty of foodie snaps to share with you today!

A little reminder that the intention behind these posts is not only to show you the types of meals I like to eat and my food philosophies, but to hopefully also show you that balance is much more enjoyable and sustainable than restrictive diets. I’ve been on so many diets in my time, and nothing, and I mean nothing, has made me happier with my body and my life in general than eating good wholesome food most of the time, learning to treat myself to pastries/chocolate/wine/all the good stuff without the guilt, and making this my lifestyle rather than a short term diet. 

Now, onto the good stuff!!

Sunday

Jared and I have been loving our pasta salads lately. We ate them last week, and on Sunday I meal-prepped a giant batch for both of us to dig into during the week. I don’t have a “recipe” for it, as I change it everytime I make it according to what’s in our fridge. For example, last week we had spelt pasta, lettuce, cherry tomatoes, cucumber, grilled chicken, bacon bits and jalapeños tossed in olive oil, salt, pepper and mixed dried herbs.

On Sunday, our batch had spelt pasta (we use the San Remo one, and I used the whole box), blanched organic broccoli and zucchini, lettuce, jalapeños and a tin of kidney beans (drained and rinsed) all tossed in olive oil, ACV, salt and pepper the Lemon & Thyme spice mix I got in my HIIT Box

I split it between two containers. The smaller one was for me to take to work and eat over the course of two days. The bigger one was Jared to have over 3 days. 

I also boiled some eggs to have with mine, and Jared planned to add tuna to his! Lunch was prepped and done for both of us in less than half an hour! I planned to also cook extra dinner during the week for the rest of our week’s lunches.

Oh, and I also made the Apple & Muesli Biscuits too!

Monday

I started my morning with a mug of warm water with ACV and honey, then went for a run. When I got back, I rinsed off and quickly threw together breakfast which was toasted sourdough we picked up at Berry Sourdough Cafe, organic eggs whisked with rice milk, salt, pepper and chopped parsley and scrambled in butter. Jared also made me a thermos of coffee to enjoy on the way into work!

For my day, I had packed the pasta salad, boiled eggs, 2 of my Apple & Muesli Biscuits and a banana.

I had my biscuits for a morning snack with a herbal tea, I had half the salad with 2 eggs for lunch and the banana for my afternoon snack.

For dinner, we had a big pot of green soup! We had green veggies that needed using up, and one of them was a bunch of silverbeet that I had been avoiding like the plague. I really dislike the taste of it, especially the stalk. I have no idea why, but I do. I didn’t want to waste it though, so Jared chopped it all up, as well as a zucchini, a head of broccoli, spring onion, 3 small potatoes and some garlic and I threw it all into a pot with 3 cups of veg stock and a tin of coconut milk. I also added salt, pepper, paprika, turmeric and curry powder (not sure how much of each – maybe 1-2 teaspoons?). 

I let it simmer for 20mins, then blended it all and served it with toasted sourdough with melted cheese. SO GOOD! I couldn’t taste the silverbeet at all, and I still got all the goodness of it! I’m definitely doing this everytime we get it!

Dessert was a couple of dark chocolate digestives. I love them!

Tuesday

I started my morning with a mug of warm water with ACV and honey, then curled up with Severus on the couch for a little while because it was my rest day from running.

Breakfast was the same as Monday, except I changed the parsley to spring onions in the scrambled eggs!

For lunch I still had some pasta salad, and for my snack I took a banana. I forgot to take more muesli biscuits though, which was a bad mistake. I was so hungry though that I ate a small bowl of the pasta mid morning (and a piece of white chocolate that was hiding in our office stash), and the rest of it for lunch. 

Dinner was a really quick and easy fried rice. Jared cooked up some red rice, and I sauteed a few diced rashers of bacon in a large wok until golden, then added a zucchini, half a head of broccoli, snow peas and some defrosted peas, corn and carrot and sauteed for maybe 3-4 more minutes, then added the cooked rice, a good splash each of GF soy sauce and teriyaki sauce and stirred it all until it was all mixed well. I also fried eggs to serve on top. There was enough for dinner and lunch for the next couple of days!

Wednesday

ACV tea, followed by a run and then breakfast was a smoothie which I was going to drink on my way to work but it didn’t even last 5 minutes after the below photo. It smelled and tasted too good, especially after a run!

It had: one banana, 1 heaped tablespoon peanut butter, 1 tablespoon chia seeds, 1 teaspoon honey and some rice milk (maybe a cup or just over?). It’s my favourite smoothie because it tastes like a chocolate thickshake!

For lunch I had fried rice and an egg leftover from dinner, and my snacks were a hard boiled egg and a tin of tuna to have on rice cakes that I have at work. I didn’t want to be as hungry as Tuesday!!

Even then, I was still starving when I got home. I think I can thank my morning runs for my increased appetite (I’m not complaining though – hello food!). I wanted to get some uni work in before dinner, and couldn’t work on an empty stomach so I had a bowl of muesli with half an apple and rice milk. So good!!

For dinner Jared made some awesome sweet and white potato chips, and we had them with pan fried flounder fillets and loads of lettuce. Jared is the king of chips, he makes them so freakin’ good. I always pile my plate HIGH with them. I can’t get enough!!

Dessert was a cup of T2 Lemongrass and Ginger Tea with some leftover Easter chocolate my sister got me. All enjoyed while I watched some uni lectures!

Thursday

ACV tea and then Jared woke up and we had breakfast together! I love my mornings off running because I actually have time to sit down for breakfast rather than having it on the go!

We had the last of our green veggie soup from dinner on Monday, with a slice of sourdough and melted cheese. So hearty and warming!

For lunch I packed the last of the fried rice, and for my snack I packed an apple and the last of our muesli (and I also bought rice milk on the way to work to keep in my work fridge).

For dinner I was really craving noodles so I bought some egg noodles and GMO free tofu on the way home and make a noodle stir fry. I diced the tofu and sautéed it in some olive oil, added 2 bunches of pak choy, a sliced zucchini and a couple of handfuls of sliced snow peas and sautéed it for a little longer. Then I added a gooooood splash each of GF soy sauce and teriyaki sauce, added the egg noodles (which I cooked in boiling water for a few minutes while I was cooking everything else) and tossed it all together.

I also sprinkled over sesame seeds and fried garlic on top to finish it off! After I took this photo, I also added loads of sriracha hot sauce to mine. SO GOOD!! I had another half a bowl after this, I love egg noodles!

I took the night off of studying (much needed after 3 nights in a row after work) and we spent it curled up the couch watching Archer together. I was asleep on the couch by 9!

FriYAY

I took the morning off of running too, as I didn’t want to get burnt out. I love running, but today was my heart was definitely telling me I needed to just have a break and enjoy my morning with Jared and Severus instead. Which is exactly what I did! Sometimes we do things for the body, and sometimes you do things for the soul.

I stayed in my bathrobe, had cuddles with Severus on the couch followed by coffee made by Jared and then I made us breakfast which was fried organic eggs, slightly burnt kale chips (kale washed and dried, then tossed in olive oil, turmeric, cumin and H. salt and cooked under the grill for a few minutes) and the last of our sourdough from Berry which was toasted and topped with loads of delicious butter.

For my snacks, I packed a banana and a tin of sun dried tomato tuna to have on my rice cakes. AND I’m buying my lunch today!! I haven’t done that in a while, so I’m pretty excited for that!
